The Story...
"My mum, who everyone, including myself, affectionately calls Grandma, was given this cake recipe and shown how to make it as a teenager. Not really interested, she was told to pay attention, as this was a special cake that could earn her money one day! My mum is now 84 years young and realises the truth in those words many decades ago, and says that it is never too late.
The cake is still handmade in the same way it has always been made. The fruit is soaked and the cake is left to mature."
What the Expert Judges thought
Tasted by leading experts this is what the judges of the Great Taste Award thought:
Visually striking, this cake looks as though it is a celebration cake because of its size and opulence. This is a luscious feast, with many layers of flavour, packed full of fruit with the rum flavour coming through with a hint of spices, which are not overpowering, The texture of the cake is moist and fruity with a strong taste of nutmeg. The icing is not oversweet with a sift texture which the judges liked. The cake is delicious and moreish."
Well distributed, if rather finely chopped, fruit with a good depth of rum flavour. The cake is impressively moist, right up to the edge. the icing is mercifully thin.
A tasty, boozy cake with a lot to admire. Heavily spiced with a well soaked sponge, we felt that soaking the fruit has added another layer of flavour and texture. The icing in particular was fantastic.
